Hey everyone, so I had a bit of a baking adventure yesterday that I just have to share. I decided to tackle some chocolate chip pumpkin muffins, but with a twist – using cake mix! I know, I know, it sounds a little out there, but trust me on this one.

First off, I grabbed all my ingredients. I picked up a box of spice cake mix from the store – that’s the secret weapon here. Then, of course, I needed some pumpkin puree, not pumpkin pie filling, big difference! A couple of eggs, some vegetable oil, and a generous amount of chocolate chips. Oh, and I almost forgot, a dash of pumpkin pie spice because, why not?

I started by preheating my oven to 350 degrees Fahrenheit. While that was warming up, I dumped the cake mix, pumpkin puree, eggs, oil, and pumpkin pie spice into a big mixing bowl. I got in there with my electric mixer and beat the heck out of it until it was all smooth and combined. No lumps allowed!

Next, I folded in the chocolate chips. I might have gone a little overboard with the chocolate chips, but who can really resist? They looked so good just sitting in the bowl, I had to sneak a few. Don’t judge me!

Then I lined my muffin tin with some paper liners. I used the cute ones with little pumpkins on them. Gotta keep it festive, right? I carefully spooned the batter into each liner, filling them about two-thirds full. You don’t want them to overflow and make a mess.

I popped the muffin tin into the preheated oven and baked them for around 18-20 minutes. The whole house started to smell amazing, like fall in a bakery. I knew they were done when I stuck a toothpick in the center of a muffin and it came out clean.

I let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely. It was so hard to resist, but I managed to wait. Finally, it was taste-test time! These muffins turned out so fluffy and moist. The spice cake mix gave them such a warm, cozy flavor, and the pumpkin and chocolate chips were a match made in heaven. Honestly, they were a huge hit with my family. Even my picky little brother went back for seconds!
