Okay, so I’ve been craving something sweet and easy, and these Rice Krispie cookies with chocolate chips totally hit the spot. I wanted to share how I made them because they were seriously so simple.
Getting Started
First, I gathered all my ingredients. I’m a big fan of having everything ready to go before I start, so I don’t have to go digging around in the pantry mid-recipe.
- Butter
- Marshmallows (the big ones, not the minis)
- Rice Krispies cereal
- Chocolate chips (I used semi-sweet, but milk chocolate would be awesome too)
- A little bit of vanilla extract
Making the Gooey Goodness
I melted the butter in a big pot on the stove over low heat. Gotta keep it low so it doesn’t burn! Once it was all melted, I dumped in the marshmallows and stirred them around until they were completely melted and smooth. It was like watching a fluffy white cloud disappear. I added Vanilla.

Mixing It All Up
Next, I took the pot off the heat and poured in the Rice Krispies. I stirred everything together really well, making sure every single Krispie got coated in that gooey marshmallow mixture. Then, I folded in the chocolate chips. I didn’t want them to melt completely, just get a little soft and swirly.
The Hardest Part (Waiting!)
I spread the mixture into a greased pan (I just used a regular baking dish). Then came the hardest part – waiting for them to cool down! I popped the pan in the fridge to speed things up a bit.
Cookie Time!
Once they were firm enough, I cut them into squares. They were chewy, chocolatey, and everything I wanted. Seriously, so good, and so easy to make!
