Okay, so I’ve been on this cooking kick lately, trying to make dinners a little more exciting. Last night was chicken pot pie night, and I knew I needed something to go with it, otherwise it’s just…pie. And while I love pie, I wanted a real meal, you know?
So I started digging around, thinking about what would actually taste good with it. I considered a few things, and my entire process went as below.
My Side Dish Experiment
I started by raiding the fridge. I always have some salad stuff, so that was my first thought. A simple green salad seemed too boring, though.

- First try: Plain lettuce, tomato, cucumber. Nope. Too blah. The creamy pot pie needed something with more…zing.
- Second try: I added some crumbled feta and a lemon vinaigrette to the salad. Better! The tangy dressing cut through the richness of the pie a bit. This was a contender.
Then I remembered I had some leftover roasted vegetables from the night before – Brussels sprouts and carrots. I figured I’d try a small portion of those on the side.
- The roasted veggies were good, but a little heavy with the already-hearty pot pie. It felt like too much “comfort food” all at once. I wanted a better balance.
I also have this thing for fruit with savory dishes. I grabbed a pear and some grapes, thinking a light fruit salad might work.
- I sliced up the pear, and the grapes, and just put them in a little * was pretty nice and different from salad.
The Winning Combo
After trying everything, I decided on a combination of two sides. The winner is:
- The salad with feta and lemon vinaigrette: It was light, fresh, and the acidity really complemented the creamy pot pie filling.
- A small portion of the fruit salad: Just a little bit of sweetness, and grapes and pears are nice and smooth, I like it.
It’s all about balance. The fresh, tangy salad balanced out the richness of the pot pie, and also a little sweet fruit. This meal made my family all feel good! I think I nailed it. Next time, I might try adding some toasted nuts to the salad for a little extra crunch. Always experimenting!
