Alright, so I’ve been seeing these pumpkin bars all over Pinterest, the ones with the yellow cake mix and cream cheese frosting. I finally caved and decided to give them a shot. Figured they’d be perfect for a little fall get-together I was having.

Getting Started

First things first, I grabbed a box of yellow cake mix – you know, the standard kind. Nothing fancy. Then, I needed the pumpkin puree, not the pumpkin pie filling, big difference! Make sure you get the plain puree. I also picked up some cream cheese, butter, eggs, powdered sugar, and the usual spices like cinnamon, nutmeg, and a pinch of cloves.

Mixing It Up

I dumped the cake mix into a big bowl, then added the pumpkin puree, a couple of eggs, some melted butter, and all those warm spices. I whisked it all together until it was nice and smooth. Honestly, it smelled amazing already!

Baking Time

I poured the batter into a greased baking pan, I used a 9×13 inch one, and popped it into the oven. I think I baked it at 350°F for around 25-30 minutes? You just gotta keep an eye on it and stick a toothpick in the center. When it comes out clean, you’re good.

Cream Cheese Goodness

While the bars were baking, I whipped up the cream cheese frosting. I softened some cream cheese and butter in a bowl, then beat them together until they were fluffy. Then, I gradually added in powdered sugar and a splash of vanilla extract. You might need to adjust the powdered sugar to get the consistency you like.

The Final Touch

Once the bars were completely cool (and I mean completely – otherwise the frosting will melt!), I spread that glorious cream cheese frosting all over the top. I even sprinkled a little extra cinnamon on top for good measure.

  • Cutting them: Make sure the bars are cooled, I can not stress that enough!
  • Serving time: You can eat right away.
  • Refrigerate: Keep it in the fridge for the best flavor.
