Okay, so I’ve been trying to up my protein intake lately, and I’m always on the lookout for new breakfast ideas. Pancakes are a classic, but I wanted something a little more… substantial. And, honestly, I’m not the biggest fan of bananas in my pancakes. So, I went on a mission to make some chocolate protein pancakes without banana. Here’s how it went down:
The Experiment Begins
First, I gathered my ingredients. This was mostly stuff I already had in the pantry, which is always a win. I’m no chef,just keep things simple is my way.
- Flour: regular all-purpose flour.
- Protein powder: I used chocolate-flavored whey protein.
- Cocoa powder: Because, you know, chocolate.
- Baking powder: For that fluffy lift.
- Salt: Just a pinch.
- Milk: I used regular old 2% milk, but almond milk works too.
- Egg: To bind everything together.
- Vanilla extract: A splash for extra flavor.
- Sweetener: I used a little bit of stevia.
Mixing It Up
I grabbed two bowls – one for the dry ingredients and one for the wet.

In the first bowl, I dumped in the flour, protein powder, cocoa powder, baking powder, and salt. I gave it all a good whisk to make sure everything was evenly distributed.
In the second bowl, I cracked the egg, then poured in the milk and vanilla extract. I also added the stevia at this point. I whisked this mixture together until it was nice and smooth.
Then, I slowly poured the wet ingredients into the dry ingredients, mixing gently with a spatula until just combined. I was careful not to overmix – that’s the key to keeping pancakes tender, I’ve heard. And, I do not want to be the one fail to make pancakes.
Cookin’ Time
I heated up my non-stick skillet over medium heat and added a tiny bit of cooking spray. Once it was hot, I poured about 1/4 cup of batter onto the skillet for each pancake.
I cooked them for about 2-3 minutes per side, until they were golden brown and cooked through. The bubbles started appearing, and I flipped ’em over – that’s my favorite part.
The Final Result
I stacked those bad boys up on a plate, feeling pretty proud of myself.I just put some fresh berries, ’cause that’s all I had. But you could totally add syrup, whipped cream, chocolate chips… whatever floats your boat.

They were delicious. Seriously, I was surprised at how good they turned out, especially without any banana. They were fluffy, chocolatey, and packed with protein – exactly what I was going for. This is definitely going into my regular breakfast rotation!
