Okay, so I’ve been trying to stick to the AIP diet, you know, the Autoimmune Protocol thing. It’s tough, especially when it comes to snacks. I used to just grab whatever, but now I gotta be all careful and plan things out. So, I went on a mission to find some AIP-friendly snack recipes that don’t taste like cardboard.

My AIP Snack Experiment

First, I hit up the internet. Searched for “aip snack recipes” and, wow, there’s a lot of stuff out there. Some of it looked pretty complicated, but I found a few that seemed doable.

Here’s what I tried:

  • Sweet Potato Fries: These were super easy. I just peeled and sliced a sweet potato, tossed the slices in some olive oil, salt, and a little cinnamon, then baked them in the oven. They turned out pretty good! A little crispy, a little sweet. Definitely a win.
  • Coconut Yogurt with Fruit: Okay, this one’s barely a recipe, but it works. I found some plain, unsweetened coconut yogurt (make sure it’s AIP compliant!), and topped it with some sliced bananas and berries. It’s not ice cream, but it satisfies that creamy craving.
  • Plantain Chips : Find some Plantain, I sliced them and fried them in a bit of coconut oil until they were crispy. Those are good and fulfilled my desire.

I gotta say, the sweet potato fries were my favorite. I made a big batch and kept them in the fridge. They were perfect for when I needed a quick, crunchy snack.

It’s still a learning process, figuring out what I can and can’t eat, and finding recipes that actually taste good. But these snacks are a good start. I feel like I can actually stick to this AIP thing without going completely crazy from snack deprivation.
