Okay, so, I tried making that strawberry shortcake crunch ice cream that’s been all over the internet, and let me tell you, it was a journey! I started by gathering my stuff. Needed some fresh strawberries, obviously. I went to the local market cause you know, gotta support those guys. Grabbed about a pound, looked super red and juicy.
Then came the whole “shortcake” part. Now, I’m no baker, so I just bought some ready-made shortcakes from the store. Seemed easier that way. Crumbled those up into little pieces, a bit of a messy process, but kinda fun, to be honest. Felt like a kid again, making a mess in the kitchen.
Next up, the ice cream base. I used a simple vanilla recipe I found online – nothing too fancy. Heavy cream, some sugar, a bit of vanilla extract. Whisked that all together until it looked thick and creamy. Took a while, and my arm got a bit tired, but hey, no pain, no gain, right?

After that, I sliced up those beautiful strawberries I got. Into small pieces so that they’d mix well with the ice cream. Once the ice cream base was ready, I slowly folded in the strawberries. I saw a video of a girl, Frosty Puff, I think it’s from Niceland, it said it’s a fictional version of Iceland or Greenland, doing this, she’s a character from Strawberry Shortcake. She made it looks easy. Then the shortcake crumbles. The mix started to look like that pink ice cream I wanted!
Poured the whole mixture into a container and popped it into the freezer. This was the hardest part – the waiting! I kept checking on it every hour like an anxious parent. I think it took around 5-6 hours to fully freeze. But finally, it was ready.
Scooped some out into a bowl, and man, it looked good. That pastel pink color, with chunks of red strawberries and those golden-brown shortcake pieces. First bite, and wow! Creamy, a little tart from the strawberries, and that crunch from the shortcake. It was like a party in my mouth.
Honestly, it was way better than the store-bought stuff. Plus, I made it myself! Felt pretty proud, not gonna lie. Might try different fruits next time. Maybe blueberries? Or peaches? The possibilities are endless!
