Okay, folks, let’s talk about these lemon bars I made. The title was “Lemon Bars with Cake Mix and Pudding,” and let me tell you, it was a bit of an experiment, but a tasty one!
The Prep Work
First, I grabbed a box of lemon cake mix. Any brand will do, really. Then, I needed a box of instant lemon pudding mix – the small one, not the giant family size. I also grabbed some butter (because everything’s better with butter, right?), a couple of eggs, and some powdered sugar for later.
Mixing It Up
I dumped the cake mix into a big bowl. Then, I tossed in the pudding mix. I melted a stick of butter (that’s half a cup, for those of you keeping track) and poured it into the bowl, too. I cracked in two eggs and stirred everything together until it was all nice and combined. It looked a little… thick. That’s okay.

Baking Time
I greased a 9×13 inch baking pan. I mean, really greased it. I didn’t want anything sticking. Then, I pressed the batter into the pan. It was kinda like playing with Play-Doh, but, you know, edible. I popped it into the oven, which I had already preheated to 350 degrees Fahrenheit. I set the timer for about 25 minutes, but your oven might be different, so keep an eye on it.
The Waiting Game (and the Glaze)
While the bars were baking, I whipped up a super simple glaze. I just mixed some powdered sugar with a little bit of lemon juice until it was smooth and runny. You can add a bit of water if it is too thick. The amount’s not that important, just eyeball it.
Finishing Touches
Once the bars were golden brown and a toothpick came out clean, I took them out of the oven. I let them cool for a bit – maybe 10 minutes or so. I am impatient. Then, I poured that glaze all over the top and spread evenly.
Let it sit for a longer while until the glaze sets and the bars are completely cool. Finally,cut it up!
I cut it into little squares after cooling it down in fridge.
The Verdict
- These lemon bars were surprisingly good!
- The cake mix made them super easy, and the pudding added a nice, soft texture.
- They were definitely lemony, but not too tart.
- Perfect for a quick dessert fix!
Would I make them again? Absolutely! Might even try it with different cake and pudding flavors next time. Maybe chocolate and butterscotch? Hmmm…
