Okay, so, I tried making this thing called a “Strawberry Funfetti Pudding Poke Cake” the other day. Sounds fancy, right? But it’s actually pretty simple. I saw a few different things about it online, and they all seemed to be saying different stuff, so I just kind of winged it and did my own thing.
First, I grabbed a box of strawberry cake mix. I mean, who has time to make a cake from scratch these days? Then, I mixed it up according to the box directions. You know, the usual oil, eggs, water situation. Nothing crazy.
While the cake was baking, I whipped up some instant vanilla pudding. Again, easy peasy. Just milk and pudding mix. I saw somewhere that you could mix the dry pudding mix into the cake batter, but I didn’t try that. Maybe next time.

- Once the cake was done, I let it cool for a bit, but not all the way. I think this helps with the next part.
- Then came the fun part – poking holes! I just used the handle of a wooden spoon, and poked holes all over the cake.
- After that, I poured the pudding over the top, making sure it got into all those holes. This is what makes it a “poke cake” and supposedly makes it super moist. We’ll see about that.
Then I chucked the whole thing in the fridge for a few hours. I guess this lets the pudding really soak in. While I was waiting, I made some whipped cream. I added a bit of vanilla cake mix to it. I saw that online somewhere, and I was like, “What the heck, let’s try it.”
Finally, I took the cake out of the fridge and slathered on the whipped cream. It looked pretty good, I gotta say. And then for the “funfetti” part, I just sprinkled some colorful sprinkles on top. Because why not?
And that was it! It was actually pretty tasty. The cake was definitely moist, and the whipped cream with the cake mix in it was interesting. Not bad, just…different. I’d probably make it again, maybe try some different flavors. We’ll see. Overall, it was a fun little baking experiment. And who doesn’t love a cake covered in sprinkles?
