So, I’ve been on this healthy baking kick lately, trying to swap out refined flours for something a little more wholesome. I had a bunch of overripe bananas sitting on my counter, practically begging to be used, and I remembered seeing a recipe for banana bread using oat flour. I’m a big fan of anything oat-related, so I thought, “Why not?”
Getting Started
First things first, I gathered my ingredients. Obviously, I needed those sad-looking bananas (the browner, the better!), and I made my own oat flour. I just tossed some rolled oats into my blender and blitzed them until they were a fine powder. Super easy!

- 3 ripe bananas, mashed
- 2 eggs
- 1/4 cup maple syrup (you could use honey too)
- 1/4 cup melted coconut oil
- 1 teaspoon vanilla extract
- 1 1/2 cups oat flour
- 1 teaspoon baking soda
- 1/2 teaspoon cinnamon
- Pinch of salt
Mixing it up
I preheated my oven to 350°F (175°C). I greased and prepared a loaf pan.
In a big bowl, I mashed those bananas until they were pretty smooth. Then, I whisked in the eggs, maple syrup, melted coconut oil, and vanilla. It looked a little weird at this point, but I just went with it.
In a separate bowl, I combined the oat flour, baking soda, cinnamon, and salt. I like to do this separately to make sure the baking soda gets evenly distributed – no one wants a mouthful of baking soda!
Then, I gradually added the dry ingredients to the wet ingredients, mixing until just combined. It is important that do not overmix!
The Final result
I poured the batter into my prepared loaf pan and popped it into the oven. It baked for about 50-55 minutes. The toothpick test is key here – stick a toothpick in the center, and if it comes out clean, it’s done!
I let it cool in the pan for a bit before I took it to a wire rack to cool down. It was hard to resist, it is beautiful!
Honestly, I was pleasantly surprised by how this turned out! It was moist, flavorful, and had a nice, tender crumb. The oat flour gave it a slightly nutty flavor, which I loved. Plus, I felt good knowing I was eating something relatively healthy. It is a perfect recipe to enjoy and share!
