Okay, so the other day I was craving tomato soup, but I only had a bunch of cherry tomatoes on hand. I figured, why not try making soup with these? I’d never done it before, but it seemed simple enough.

Getting Started

First, I grabbed all my ingredients. Besides the cherry tomatoes, I pulled out some olive oil, an onion, a couple of garlic cloves, vegetable broth, and some dried basil and oregano. I also found a little bit of sugar, just in case the tomatoes were too tart.

  • Cherry Tomatoes (about 2 pints, I guess)
  • Olive Oil
  • One Onion
  • 2-3 Garlic Cloves
  • Vegetable Broth (around 4 cups)
  • Dried Basil
  • Dried Oregano
  • Sugar (just a pinch)
  • Salt and Pepper

The Cooking Process

I started by washing the cherry tomatoes and setting them aside. Then, I chopped up the onion and minced the garlic. I heated a good glug of olive oil in a big pot over medium heat. Once it was hot, I tossed in the onion and cooked it until it was soft and see-through, maybe 5 minutes or so.

Next, I added the minced garlic and cooked that for another minute, just until it smelled really good. Be careful not to burn the garlic, it should be just fragrant, not brown.

Then, I dumped in all the cherry tomatoes. I stirred them around and let them cook for a bit, maybe 10 minutes. They started to soften and burst, which is exactly what I wanted.

After that, I poured in the vegetable broth. I added about a teaspoon each of dried basil and oregano, and a pinch of sugar, and seasoned it with salt and pepper. I brought the whole thing to a boil, then turned down the heat and let it simmer for about 20 minutes. The tomatoes got really soft and the flavors all melded together. it should be the flavor of all the ingredients mixed.

Finishing Up

Once it was done simmering, I took the pot off the heat. I used my immersion blender (seriously, one of the best kitchen tools ever) to blend the soup right in the pot until it was smooth. If you don’t have an immersion blender, you can carefully transfer the soup in batches to a regular blender, but be super careful because it’s hot!

I gave it a taste and added a little more salt and pepper. And that was it! Seriously, so easy. I ladled the soup into bowls and enjoyed my homemade cherry tomato soup. It was surprisingly delicious, with a nice sweetness from the cherry tomatoes.

I will definitely make it again. I made this one time, and I was amazed at how simple it was, all I had to do was just put the ingredients in and let it simmer.
