Okay, so yesterday I tried something new in the kitchen. I had this box of strawberry cake mix sitting in the pantry, and I was craving cookies. Then I remembered seeing somewhere that you can make cookies from cake mix. I thought, why not give it a shot? It seemed easy enough, and I love anything strawberry flavored.
Getting Started
First, I grabbed the cake mix, some eggs, oil, and a bit of strawberry gelatin. I didn’t have a real recipe, just a vague idea from something I saw online. I preheated the oven to 350 degrees Fahrenheit, like most cookie recipes say to do. Then, I dumped the cake mix into a big bowl.
Mixing It Up
Next, I cracked two eggs into the bowl and poured in about 1/3 cup of oil. I also added a spoonful of the strawberry gelatin for extra flavor and color. I started mixing everything together with a big spoon. At first, it was kind of dry and crumbly, but after a bit of mixing, it turned into a nice, thick dough. The color was this really pretty pink, thanks to the cake mix and the gelatin.

Baking Time
I scooped out spoonfuls of the dough and dropped them onto a baking sheet. I didn’t grease the sheet or anything, just plopped the dough right on. I left some space between each cookie because I figured they would spread out a bit while baking.
I slid the baking sheet into the oven and set a timer for about 10 minutes. While the cookies were baking, I started cleaning up the mess I made.
The Result
- After 10 minutes, I checked on the cookies. They looked done – a little golden around the edges and soft in the middle.
- I took them out of the oven and let them cool on the baking sheet for a few minutes before moving them to a wire rack.
- They smelled amazing, like sweet strawberries.
Once they were completely cool, I tried one. It was really good! Soft and chewy, with a nice strawberry flavor. I think the gelatin added a little extra something. These cookies are perfect for a quick treat. I made them thinking of Valentine’s Day or maybe even Mother’s Day, They’re so easy and tasty, and pretty too. I’m definitely going to make these again. Maybe next time, I will try using a different flavor of cake mix.
