Okay, so I had this box of strawberry cake mix sitting in my pantry for, like, forever. I kept thinking, “I should make a cake,” but honestly, plain old cake just seemed boring. So, I started wondering, what else can I do with this thing?
First, I just made a normal cake by reading the instructions on the box. It said to add some eggs, oil, and water, and then to bake the batter for 30 minutes. It wasn’t anything special; it was just a simple cake. But after making the cake, I had some extra batter.

After that, I got a little more adventurous. I made some donuts. I made them by pouring the batter into a donut pan and baking for like 15 minutes. After they cooled down, I just dipped the donuts in a simple glaze that I made with sugar, milk, and some pink food coloring. I gave the donuts to my kids, and they loved the pink glaze.
But wait, there’s more! I decided to make cupcakes. I scooped some batter into cupcake liners and baked them for like 18 minutes. When they were done, I just made some cream cheese frosting and added some food coloring. After waiting for the cupcakes to cool down, I added the cream cheese frosting.

- Donuts: Pour batter into a donut pan. Bake for 15 minutes. Dip in a simple glaze.
- Cupcakes: Scoop batter into cupcake liners. Bake for 18 minutes. Add cream cheese frosting.
Oh, and another thing I tried was swirling some cream cheese into the batter. I just softened some cream cheese, mixed it with a bit of sugar, and then swirled it into the batter before baking. It added this tangy, creamy thing that was pretty darn good.
I also messed around with toppings. I tried some ganache on a couple of cupcakes, which was super rich and chocolatey. And whipped cream is always a good idea. Plus, I had some strawberries, so I sliced them up and put them on top of some of the cupcakes. It was like a whole new dessert.
Honestly, just adding fruit curd between cake layers, it’s great too. I tried it the other day by adding some strawberry curd between the layers, and it was like the cake I always wanted.
