This here lemon poke cake, it’s the best, I tell ya. Everybody loves it when I make it. It’s easy, too. Just gotta have the right stuff.
Gettin’ Started
First, ya gotta bake a cake. Any old white cake mix will do. Just the cheap stuff from the store. I use 9-inch round pan. It is just perfect. I prefer round pan. Some people like other shape. That’s fine. Just use what you have.
- Cake mix
- Egg whites
- Oil and water
Follow the box, you know. Mix it all up. Make sure it is not too thick or too watery. Cook it in the oven like it says. Let it cool down some when it’s done. Not too long, just a bit. We don’t want it to be too cold.

Poke and Jello
Now comes the fun part. We gotta poke holes in that cake. I use the handle of a wooden spoon. Works real good. Just poke all over. Don’t be shy with it. The more holes, the better, I always say. Then the cake can soak up more juice.
Next, we need that lemon Jell-O. That’s what gives it that good lemon taste and color. Mix it up with some hot water. Stir it good ’til it’s all dissolved. Then pour it all over that cake. Make sure it gets in all them holes we made.
Puddin’ Time
Now for the puddin’. Instant lemon pudding mix is what ya need. You can buy it at any store. Mix that up with some cold milk. Stir it ’til it gets thick. It won’t take too long. This makes the cake even more moist. So good, I tell ya.
- Lemon Jell-O
- Instant lemon pudding
- Milk
Spread that puddin’ all over the top of the cake. Make sure it’s nice and even. Cover the whole top. Don’t leave any spots bare.
Chill Out
Now we gotta let it chill. Put it in the icebox for a few hours. At least four hours, I’d say. The longer the better. Then it sets up all nice. And the flavors all mix together. Gives it time to get real tasty. You will have a good cake later!
When you take it out, it’ll be all set. You can cut it into squares. I like big squares. It is very delicious. Serve it up to your family. They’ll love it, I guarantee. It’s always a hit at my house.
Why It’s So Good
That Jell-O, it makes the cake real moist. And it gives it that bright lemon flavor and color. And the puddin’, oh, that puddin’. It makes it even softer. And it adds even more lemon taste.
Lemon poke cake with Jell-O and pudding. It is so good. And it’s so easy to make. Even if you’re not a good cook, you can make this. Trust me. I know about these things. This cake will make you happy.

Some folks like to put whipped cream on top. That’s good, too. But I think it’s just fine the way it is. Sometimes I add it, sometimes I don’t. Depends on what I got in the house. This time, I don’t have it.
Tips from Me
Make sure you use fresh lemon juice if you got it. It makes the flavor even better. But if you don’t, the bottled stuff is okay, too. I know sometimes fresh lemon is too expensive. Use what you can afford.
Don’t be afraid to experiment. You could try different flavors of Jell-O. Or different flavors of puddin’. But lemon is my favorite. I always use lemon flavor. I think it is the best. It is the most popular one in my family.
This lemon poke cake is perfect for any time. Birthdays, potlucks, or just a regular Tuesday. It’s always good. And it’s easy to make. What are you waiting for? Try it and you will be satisfied!
One more thing, if you have leftovers, just put them in the icebox. It’ll keep for a few days. But it probably won’t last that long. It is usually gone very quickly. Everyone wants a second piece. If you want to save some, you need to hide it.
