Alright, let’s get cookin’! Today, I’m gonna show you how to make them lemon bars, but we’re gonna cheat a little and use a cake mix. It’s easy as pie, even easier maybe. I have made many lemon bars in my life, this is a good way.
Gettin’ Started
First things first, you gotta get your stuff together. Here’s what you need for these lemon bars:
- A box of lemon cake mix. Any kind will do.
- Some eggs. Fresh from the coop is best, but store-bought works too.
- Butter. Gotta have butter, it makes everything better.
- Lemon pie filling. This is our secret weapon.
- Powdered sugar, for dusting on top. Makes ’em look pretty.
Mixing it Up
Now, preheat that oven to 350. Don’t want it too hot or too cold. Just like Goldilocks, it’s gotta be just right. Grab a big bowl and dump in that cake mix.

Crack in a couple of eggs. If a little shell falls in, don’t fret. Just fish it out. Adds a little crunch, some folks say. And you add some water. Not too much! It should be a little sticky, but still some dry mix left. You don’t need to mix it up real good here.
Now, melt that butter. You can do it in the microwave, but watch it close. Don’t want it to explode all over the place. Once it’s melted, pour it into the bowl with the cake mix and eggs. Give it a good stir. It should be kinda thick, like pancake batter. But not too thick. If it’s too thick, add a tiny splash of water to the cake mix.
Bakin’ Time for the lemon bars
Grease up a baking pan. I use a 9×13 inch one. You can use butter or that cooking spray. Whatever you got on hand. Pour that batter into the pan and spread it out even. I have seen others use parchment paper. I guess that’s fine.
Pop it in the oven and let it bake. Now, every oven is different. Mine takes about 20-25 minutes. But you gotta keep an eye on it. You want it to be golden brown around the edges. This is your crust for the lemon bars.
The Lemon Pie Filling
While that crust is bakin’, let’s work on the lemon part. Grab another bowl. Dump in that can of lemon pie filling. Some folks like to make their own filling, but I say, why bother? The canned stuff is just fine.
Now, some folks like to add a little extra lemon juice to the filling. If you want it really tart, go ahead. But I think it’s lemony enough already. Just stir it up good, make sure there ain’t no lumps.
Putting it all Together
Once that crust is done, take it out of the oven. Let it cool for a little bit. Don’t want to burn yourself. Then, pour that lemon filling over the crust. Spread it out nice and even with the back of a spoon or fork.
Now, you can pop it back in the oven for a few more minutes, just to set the filling. Or, if you’re like me, you can just let it cool completely on the counter. Either way works.

The Final Touch
Once those lemon bars are completely cool, it’s time for the final touch. Dust the top with powdered sugar. Makes ’em look all fancy. You can use a sifter, or just sprinkle it on with your fingers. Just make sure you cover the whole thing.
Then, cut ’em into squares. I like to make ’em kinda small, so you can have more than one. But you can make ’em as big or small as you want. This is how you make lemon bars with cake mix.
Tips and Tricks
- If you want a thicker crust, you can use two boxes of cake mix.
- You can also add other things to the batter, like nuts or coconut.
- For a really fancy dessert, you can serve these lemon bars with a dollop of whipped cream.
- If you don’t have a box of cake mix, I guess you can make your own, but I think that is too much work.
