Okay, so the other day I was craving something sweet, but also kinda healthy, you know? I had a bunch of sweet potatoes and apples sitting around, and I remembered this crock pot recipe I saw a while back. Figured I’d give it a shot!
Getting Started
First things first, I grabbed my slow cooker – seriously, that thing is a lifesaver. Then I washed and peeled about 3 medium-sized sweet potatoes. I chopped those up into, like, one-inch chunks. Nothing fancy, just bite-sized pieces.
Next up, the apples! I had two Honeycrisp apples, because that’s what I like, but you could use any kind, really. I peeled, cored, and chopped those up too, about the same size as the sweet potatoes.

Putting It All Together
I threw the sweet potatoes and apples into the crock pot. Then I added some other stuff to make it tasty. I think I used:
- About 1/4 cup of brown sugar (you can adjust this to your sweetness preference)
- A couple tablespoons of butter, cut into little pieces
- A teaspoon of cinnamon
- A pinch of nutmeg
- A splash of vanilla extract (maybe a teaspoon or so?)
I didn’t add any extra liquid, because the apples and sweet potatoes release their own juices as they cook. It seemed like the right thing to do at the time.
The Waiting Game
I put the lid on the crock pot, set it to low, and…walked away! Seriously, that’s the beauty of slow cookers. I think I let it cook for about 6 hours. I checked it a couple of times, just to make sure nothing was burning, and gave it a little stir.
The Sweet, Sweet Result
After about 6 hours, the sweet potatoes were super tender, and the apples were all soft and delicious. The whole house smelled amazing, like fall in a pot! I scooped myself a big bowl and dug in. It was exactly what I was craving – sweet, warm, and comforting. And, hey, at least it had some vitamins, right? Totally making this again!
