Okay, here’s my blog post about making a French Apple Cake with Almond Flour:
So, I’ve been on this baking kick lately, trying to find healthier alternatives to my favorite treats. I stumbled upon this recipe for a French apple cake, and I thought, “Why not give it a shot?” And, importantly, make it with almond flour.
Getting Started
First things first, I gathered all my ingredients. You know, the usual suspects: apples (I used Honeycrisp because that’s what I had), almond flour, eggs, butter, a little sugar, and some baking powder. I also threw in some cinnamon and a pinch of salt because, well, why not?

Mixing it Up
I started by melting the butter. I’m not gonna lie, I almost always over-melt my butter, so I had to be extra careful. While that was cooling, I whisked together the eggs and sugar. I just used a regular whisk – nothing fancy. Then, I slowly poured in the melted butter, making sure it wasn’t too hot so it wouldn’t scramble the eggs. (Been there, done that!).
Next, I added the almond flour, baking powder, cinnamon, and salt. I mixed everything until it was just combined. You don’t want to overmix it, or the cake can get tough. The batter was surprisingly thick, almost like a dough, but that’s apparently normal for almond flour.
Apple Time!
Now for the fun part! I peeled, cored, and sliced my apples. I probably could have sliced them thinner, but I was impatient. I arranged the apple slices on top of the batter in a circular pattern. It looked pretty… rustic. Let’s go with that.
Into the Oven
I preheated my oven to 350°F (175°C). I lightly greased a cake pan, just a regular round one, I poured batter in the cake pan and baked for about 40 minutes. I checked it with a toothpick – it came out clean, so I knew it was done. It smelled amazing, by the way. All that cinnamon and apple goodness.
The Final Result
I let the cake cool completely before I sliced it. And I have to say, it was pretty good! It was moist, not too sweet, and the almond flour gave it a nice, slightly nutty flavor. The apples were soft and tender. It was a perfect afternoon snack with a cup of tea.
It wasn’t perfect, not like a fancy bakery cake, but it was homemade, and that’s what counts, right?
Would I make it again? Absolutely! Maybe next time I’ll try adding some chopped nuts or a glaze on top.
