Okay, so I saw this recipe for a mandarin orange and pineapple salad and thought, “Why not?” I’m always up for trying something new, especially if it involves fruit. It seemed pretty simple, so I decided to give it a whirl.
Getting Started
First, I gathered my ingredients. I already had a can of mandarin oranges and some pineapple chunks in the pantry. Score! I also grabbed some plain * recipe called for some coconut, but I skip it.
Putting It All Together
I drained the mandarin oranges and pineapple chunks. This part is important, you don’t want a soggy salad, right? Then, I dumped them both into a medium-sized bowl.

Next, I added a few big spoonfuls of the plain yogurt. I didn’t really measure, I just eyeballed it until it looked like enough to coat all the fruit. I stirred everything together gently, making sure all the fruit was nicely covered in the yogurt.
The Final Result
And that was it! Seriously, it took maybe five minutes total. I spooned some into a bowl and took a bite. It was pretty good! The sweetness of the pineapple and the slight tang of the mandarin oranges went really well with the creamy yogurt. It’s definitely a refreshing little snack or side dish, perfect for a hot day.
