So, I decided to make this mandarin orange vanilla pudding salad thing today. I found a recipe online, and it looked pretty simple. I got all my stuff together – a box of vanilla instant pudding mix, a can of crushed pineapple (juice and all), and a can of mandarin oranges.
First, I grabbed a medium bowl and dumped in the pudding mix. Then, I poured in the crushed pineapple with its juice – didn’t drain it or anything. I figured the juice would add some extra flavor, you know?
- Get the ingredients ready: vanilla pudding mix, crushed pineapple, mandarin oranges.
- Mix pudding and pineapple (with juice) in a bowl.
Next, I opened the can of mandarin oranges and drained them. I added them to the bowl with the pudding and pineapple. I gave it all a good stir, making sure everything was mixed up real good.
- Drain mandarin oranges and add them to the bowl.
- Stir everything together.
After that, I covered the bowl with some plastic wrap and stuck it in the fridge. I let it chill for at least an hour, I think it was more like two cause I got distracted watching something on TV. I wanted it to be nice and cold, and I figured the flavors would meld together better that way.
- Cover the bowl and refrigerate for at least an hour.
Chill and Enjoy
Finally, I took the salad out of the fridge and gave it another quick stir. It looked pretty good, all creamy and fruity. I served it up, and it was actually really tasty! It was sweet, but not too sweet, and the mandarin oranges were a nice touch. I might add some cool whip next time, make it even more dessert-like. But yeah, it was a pretty easy recipe, and I’d definitely make it again, maybe for a potluck or something.
