Okay, so I tried making these almond butter banana oatmeal cookies the other day. They turned out pretty good, so I thought I’d share my experience.
First, I gathered all the stuff I needed: ripe bananas, almond butter, rolled oats, some maple syrup, and a few other things. I mashed up the bananas in a big bowl. Gotta make sure they’re nice and ripe, otherwise, they won’t be sweet enough.
Then, I threw in the almond butter. I used the creamy kind, but I guess you could use crunchy if that’s what you like. I mixed it all up until it was smooth. It was kind of a workout, but it was worth it.

Next, I added the rolled oats. I had to make sure I used the right kind of oats, not the instant ones. I poured in some maple syrup too, just a little bit to give it some extra sweetness. I also added a pinch of salt, because that’s what you’re supposed to do, right?
- Mixing Time: I mixed everything together. It took a while to get all the oats evenly coated, but I got there eventually. The mixture was pretty thick and sticky.
- Scooping and Baking: I used a spoon to drop little blobs of the mixture onto a baking sheet. I lined the sheet with parchment paper first, so the cookies wouldn’t stick. I popped them in the oven, which I had already preheated.
- Waiting Game: Then came the hard part—waiting. I had to wait for the cookies to bake, and it felt like forever. I kept checking on them, making sure they didn’t burn.
- Cooling Down: Finally, they were done! I took them out of the oven and let them cool on the baking sheet for a few minutes. Then, I moved them to a wire rack to cool completely.
I did something extra special. I melted some dark chocolate and drizzled it over the top of the cookies. I also sprinkled some chopped pecans on top for a little crunch. And for a tasty boost, I even added some walnuts and crunchy granola into the batter, which made it more chewy!
They were so tasty!
Honestly, these cookies were a hit. They were chewy, a little sweet, and had that nice almond butter flavor. They’re also pretty healthy, so I didn’t feel too guilty about eating a few. This recipe made me about a dozen delicious cookies. I guess you could say they’re a good blend of savory and sweet, and they have a nice mix of textures.
If you’re looking for a simple cookie recipe that’s not too unhealthy, give these a try. They’re easy to make, and you probably have most of the ingredients already.
