Okay, so today I really wanted to make something warm and filling, you know, the kind of meal that just hugs you from the inside. I decided to whip up some chicken and noodles over mashed potatoes. Sounds good, right?
First things first, I grabbed a rotisserie chicken from the store. It’s already cooked and seasoned, which saves a ton of time. Then, I got a big pot and heated some oil in it over medium heat. I had some chicken breasts in the fridge, so I tossed those in, just to have some extra. I cooked them until they were nice and brown on both sides, then took them out and set them aside.
While the chicken was browning, I started on the mashed potatoes. I peeled and chopped up some potatoes, boiled them until they were soft, and then mashed them up with a good amount of butter and milk. Seasoned them with salt and pepper, of course. Gotta have that flavor!

Next, in the same pot I cooked the chicken in, I made a quick sauce. I didn’t have mushrooms, but the rotisserie chicken already had this creamy thing going on. I just added some broth and let it simmer a bit. I shredded the rotisserie chicken and the chicken breasts I cooked earlier, and threw all that into the sauce.
- Boiled some egg noodles separately.
- Waited until they were tender.
- Drained them.
To serve, I scooped a big pile of those creamy mashed potatoes onto a plate, ladled the chicken and noodles over the top, and poured some of that delicious sauce all over everything.
The Result
Man, let me tell you, it was exactly what I needed. The chicken was so tender, the noodles were perfect, and those mashed potatoes were just heavenly. It all came together so well. This is definitely going to be a regular in my dinner rotation from now on!
And a little broth will make the whole dish richer! Oh, don’t forget to sprinkle with salt and pepper, that’s the key!
