Okay, let’s talk about this mini meatloaf recipe with Stove Top stuffing. I wanted to try something different, you know? I was tired of the same old meatloaf. So, I thought, why not use stuffing mix instead of breadcrumbs? I had a box of Stove Top stuffing in my pantry that was about to expire, so it was the perfect opportunity. I also wanted to add some veggies and stuff to make it more interesting.
First, I gathered all my ingredients. I grabbed the Stove Top stuffing mix, some ground beef, ketchup, eggs, and some water. I also chopped up some onions, celery, and carrots – just a little bit of each to add some flavor and texture.
Then, I preheated my oven to 350°F. While it was heating up, I got a big bowl and mixed the ground beef, stuffing mix, veggies, and one egg. I also added some ketchup and water to keep it moist, I’d heard that adding milk can help keep it moist, so maybe next time I can try to add milk, but this time I didn’t. I used my hands to mix everything together – it’s a bit messy, but it’s the best way to make sure everything is combined well, I guess.
After that, I shaped the mixture into small loaves. I made about four mini loaves, but you can make more or less depending on how big you want them. I placed them on a baking sheet lined with parchment paper.
Then, I mixed some more ketchup with a little bit of water and brushed it over the top of each mini meatloaf. This gives it a nice glaze and extra flavor.
I popped the baking sheet in the oven and baked them for about 30 minutes. You’ll know they’re done when the internal temperature reaches 160°F – I used a meat thermometer to check.
- Ingredients:
- 1 box Stove Top stuffing mix
- 1 pound ground beef
- 1/2 cup ketchup
- 2 eggs
- 1/2 cup water
- 1/4 cup chopped onion
- 1/4 cup chopped celery
- 1/4 cup chopped carrot
Steps:
- Preheat oven to 350°F.
- Mix ground beef, stuffing mix, veggies, 1 egg, 1/4 cup ketchup, and 1/4 cup water in a large bowl.
- Shape into mini loaves and place on a baking sheet.
- Mix remaining ketchup and water, brush over loaves.
- Bake for 30 minutes or until internal temperature reaches 160°F.
Once they were done, I took them out of the oven and let them cool for a few minutes. They smelled amazing! I served them with some mashed potatoes and gravy – it was a perfect comfort food meal.
Honestly, these mini meatloaves turned out pretty good! The stuffing mix added a nice savory flavor, and the veggies made it a bit more interesting. It was a super easy and quick dinner, perfect for a weeknight. I’ll definitely be making these again, maybe I’ll experiment with different veggies or spices next time, or use other meat like pork.
