Okay, guys, so today I wanted to try something a little different in the kitchen. I had this box of pancake mix sitting in my pantry, and I was craving cinnamon buns, but, like, who has the time for all that dough-making, right? So I thought, why not try to make cinnamon buns with pancake mix? Let’s see how it went down.
Getting Started
First things first, I grabbed that pancake mix and checked the instructions on the box. It was a simple “just add water” kind of mix, which is my favorite. I dumped two cups of the mix into a big bowl, and then I added about a cup and a half of water, just like the box said. I mixed it all up with a whisk until it was nice and smooth, no lumps allowed!
Making the Filling
Now for the good stuff—the cinnamon filling. In a separate bowl, I combined about half a cup of brown sugar with two tablespoons of cinnamon. I also melted a stick of butter because, let’s be real, butter makes everything better. I poured the melted butter into the sugar and cinnamon mix and stirred it until it was all gooey and delicious.

Putting It Together
Next, I sprayed a baking sheet with some cooking spray. You could use parchment paper, but I was out, so spray it was. Then, I poured the pancake batter onto the baking sheet, spreading it out into a large rectangle. I tried to make it even, but it’s pancake batter, so it wasn’t perfect. After that, I spooned the cinnamon filling all over the batter, spreading it evenly. This part was messy but fun.
Rolling and Baking
Here comes the tricky part—rolling it up. I carefully started rolling the batter from one long side, like a giant burrito. It was a bit tricky because the batter was soft, but I managed to get it all rolled up. Then I sliced the roll into about an inch-thick pieces with a knife. I placed these little cinnamon swirls on the baking sheet, leaving some space between them.
I popped the baking sheet into a preheated oven at 375 degrees Fahrenheit. The box said to bake pancakes for like 10 minutes, but these were thicker, so I set the timer for about 20 minutes. I kept an eye on them, and when they looked golden brown, I pulled them out. The smell was amazing, by the way.
The Final Touch
While the buns were cooling, I whipped up a quick glaze. I just mixed some powdered sugar with a little milk until it was the right consistency. Once the buns were cool enough to handle, I drizzled the glaze all over them. You could also add nuts or raisins at this point, but I kept it simple.
The Verdict
So, how were they? Honestly, pretty darn good! They weren’t exactly like traditional cinnamon buns, but they were soft, sweet, and had that cinnamon flavor I was craving.
