Okay, so today I decided to make some blueberry muffins, but I wanted to make them a little healthier. I thought, why not add some protein powder? So that’s what I did. Here’s how it went.
First, I gathered all my ingredients. I grabbed some all-purpose flour, which is, like, the main thing in muffins. You could probably use whole wheat flour if you’re feeling extra healthy, but I just used the regular stuff. I also needed sugar, baking powder, salt, eggs, milk, and of course, blueberries. And the special ingredient: protein powder! I just used some vanilla-flavored whey protein I had in the cupboard.
Then I started mixing. I took two bowls. In one, I mixed the dry ingredients: flour, sugar, baking powder, salt, and the protein powder. I just dumped them all in and gave them a good whisk. In the other bowl, I whisked together the wet ingredients: eggs, milk, and some melted butter. Make sure that butter isn’t too hot, or it’ll cook the eggs.

Next, I poured the wet ingredients into the dry ingredients. I mixed them gently until they were just combined. Don’t overmix, or the muffins will be tough. Then I gently folded in the blueberries. I used fresh ones, but frozen would probably work too. Just don’t thaw them first, or they’ll make the batter all soggy.
After that, I scooped the batter into a muffin tin. I filled each cup about two-thirds full. I sprinkled a little bit of sugar on top of each muffin, because why not? Then I popped the tin into a preheated oven. I think I baked them for about 20 minutes at 375 degrees, but you might need to adjust the time depending on your oven.
The Result
- They turned out pretty good! They were definitely more dense than regular muffins, but I guess that’s because of the protein powder.
- They were still moist and fluffy enough, though, and the blueberries were all juicy and delicious.
- They weren’t too sweet, which I liked. It’s not very healthy, but they were really good with some extra butter spread on them.
Overall, I’d say it was a success. It’s a good way to add some extra protein to your diet, and they make a nice breakfast or snack. I’ll probably make these again, maybe with different flavors of protein powder. Or maybe I’ll add some nuts or other stuff to make them even more interesting. Give it a try!
