So, the other day I had this HUGE party. And, like always, I way over-prepared. I ended up with, no joke, three giant cheese balls. All cream cheese based, delicious, but… three? Nobody can eat that much cheese ball, not even me, and I love cheese balls.

That got me thinking – can you even freeze these things? I mean, I freeze leftovers all the time, but cream cheese? It seemed… iffy. I didn’t want to ruin a perfectly good cheese ball by turning it into some weird, watery mess.

My Little Experiment

Here’s what I did:

  • Step 1: The Wrap Job. I grabbed one of the cheese balls (the one with the pecans – my favorite!), and wrapped it up TIGHT. First, in plastic wrap. Like, really tight, making sure no air could get in. Then, I did another layer of plastic wrap, just to be extra sure.
  • Step 2: Extra Protection. Because I’m paranoid, I then put the double-wrapped cheese ball into a freezer-safe zip-top bag. I squeezed out as much air as humanly possible before sealing it.
  • Step 3: Into the Freezer. I tossed it in the back of my freezer, where it’s coldest, and… waited.

I left it in there for about two weeks. I figured that was long enough to see if it would survive the freezing process.

The Big Reveal!

When I finally took it out, I let it thaw in the fridge overnight. I wasn’t about to rush this. When openned the bag, the cheese ball looked okay. It was still round, still covered in pecans, and no signs of ice crystal.

The moment of truth: the taste test. I sliced off a piece and… it was… pretty good! Seriously! The texture was a little bit different. Maybe a tiny bit grainier than before, but honestly, barely noticeable. It was still creamy, still delicious, and the flavor was totally there.
