Okay, so I’ve been trying to up my protein intake lately, and I thought, why not start with breakfast? Pancakes are my all-time favorite, but the regular ones are just, you know, carbs and sugar. So, I went on a mission to make some high-protein pancakes that are still fluffy and delicious. And guess what? I didn’t want to use any of that protein powder stuff.

First things first, I grabbed some cottage cheese. I know, it sounds weird, but trust me on this one. I used 2% cottage cheese because I read somewhere that it gives the best texture, and boy, were they right. Plus, a cup of this stuff has like 30 grams of protein. That’s a lot!

  • Cottage Cheese (2%): One cup.

Next up, I needed some liquid, so I went with regular milk. I like using dairy milk because it’s got some protein, and it’s not overly processed. But hey, if you’re not into dairy, soy milk is a good swap.

  • Milk: As needed to get the right consistency.

I cracked in a couple of eggs for some extra protein and to help bind everything together.

  • Eggs: Two.

For the dry ingredients, I kept it simple with some rolled oats. I just threw them in a blender and pulsed until they were kind of like flour. Easy peasy.

  • Rolled Oats: About half a cup.

Now, the fun part. I mixed all the wet ingredients together until they were nice and smooth. Then, I added the oat flour and mixed just until combined. Don’t overmix, or the pancakes will be tough. I let the batter sit for a few minutes to let the oats soak up some of the liquid. This helps make the pancakes fluffier. After that I put the batter on a hot pan and cooked until it looks golden brown on both sides.

And there you have it, high-protein pancakes without any protein powder. I topped mine with some fresh berries and a drizzle of honey, but you can get creative with your toppings. These pancakes kept me full all morning, and they were actually pretty tasty. I’m definitely adding these to my regular breakfast rotation.
