Okay, so, I’ve been craving a good brisket sandwich lately. You know, the kind that’s so tender it practically melts in your mouth? I finally decided to take matters into my own hands and make one myself. Let me tell you, it was a journey, but oh so worth it.
First things first, I went to the local butcher and picked up a decent-sized brisket. It was about 4 pounds, which seemed like a good amount for a first-timer. Then I started to prepare it. I trimmed some of the excess fat, but not all of it. You need some of that fat for flavor and to keep the meat moist during the long cooking process.
Next up was the rub. I decided to keep it simple: salt, pepper, garlic powder, onion powder, and a touch of paprika. I mixed all that up in a bowl and rubbed it generously all over the brisket, making sure to get it into every nook and cranny.

Slow and Low
- I preheated my oven to 225 degrees Fahrenheit. Yeah, it’s low, but trust me, that’s the key to a tender brisket.
- I placed the brisket in a large roasting pan, fat-side up. I added about a cup of beef broth to the bottom of the pan for extra moisture.
- Then, into the oven it went. And there it stayed… for a long, long time. I’m talking about 8-10 hours, but it depends on the size of your brisket.
- I checked on it every couple of hours, basting it with the juices in the pan and added more broth if needed.
Finally, after what felt like forever, it was done. The internal temperature reached about 200-205 degrees Fahrenheit, and a fork slid in and out easily. I took it out of the oven and let it rest for at least 30 minutes, tented with foil. This is important, folks, don’t skip this step! It allows the juices to redistribute, resulting in a more tender and flavorful brisket.
Once it rested, it was time to slice. I used a sharp knife and carefully sliced against the grain. The meat was so incredibly tender, it almost fell apart as I sliced it. I piled the sliced brisket high on some fresh buns, added a dollop of my favorite BBQ sauce, and dug in.
Guys, it was amazing. Seriously, one of the best sandwiches I’ve ever had. It was definitely a labor of love, but the results were well worth the effort.
