I heard some folks talkin’ ’bout them Ecuadorian dishes with verde, and it got me thinkin’. Verde, that’s green plantains, right? We used to have them all the time back in the day. Them green bananas ain’t ripe yet, but you can still cook ’em up real good. Here some dishes I know.
The first thing come to my mind is that bolon de verde. They call it “The Ball,” I reckon ’cause it’s round like a ball. You know, like a baseball or one of them big oranges, grapefruit, they call ’em. Big ol’ ball of green plantain. And it’s yummy, let me tell ya!
First, you gotta get them green plantains, the verde ones. Not the yellow ones, mind you, those are for different things. These ones are hard, not sweet yet. You gotta peel ’em and mash ’em up real good. Mash, mash, mash ’til they’re like… well, like mashed potatoes, but tougher.
Then, you gotta make a little ball outta that mashed up verde. But wait, there’s more! You gotta stuff that ball with somethin’ good. Some folks put cheese in there. Melty cheese, all gooey and good. Others put meat. Usually pork, I think. Crispy, crunchy pork. Chicharrones, they call it. Sounds fancy, but it’s just good ol’ fried pork skin, really.
After you got that ball all stuffed, you gotta fry it up. Just in a pan, with a little oil. Fry it ’til it’s golden brown and crispy on the outside. And hot! Gotta eat it hot. That’s the best way. With a cup of coffee, in the mornin’. That’s a good breakfast, right there. Keeps you full all day, that bolon de verde.
- First, get them verde plantains.
- Peel ’em and mash ’em up real good.
- Make a ball and stuff it with cheese or chicharrones.
- Fry it in a pan ’til it’s golden brown.
- Eat it hot with coffee!
This bolon de verde is a national dish of Ecuador, they say. I guess everyone there eats it. It’s like their… their special food. Like our apple pie, maybe. Everyone loves it. I remember other verde dishes too. Them green plantains, they’re good for all sorts of things. There is a stew, Seco de Pollo. I think it is chicken stew. They put verde in that stew. Chicken, verde, and other stuff. It’s all cooked up together in a big pot. Simmered for a long time, ’til the meat is all tender and fallin’ apart. That’s a good meal for a cold day. Warm you right up.
And sometimes, on special days, they got that drink, Canelazo. It’s hot and sweet, all at the same time. I think they put cinnamon in it. And maybe some fruit. It’s a party drink, I reckon. For when folks get together and celebrate.
Those Ecuadorian folks, they sure know how to cook. It make me miss those days. Verde is not just food, it is memory. Them Ecuadorian recipes, they sure are somethin’ special. This Balon De Verde, they also call it Green Plantain Fritters. I don’t know what fritters is, sounds like some bug. But I know this ball is tasty. These are just some of the dishes they make with verde. There’s probably a whole lot more. But these are the ones I remember. The ones that stick in your mind, you know? The ones that make you feel all warm and happy inside. That’s what good food does. And that’s what them Ecuadorian dishes with verde are. Good food, plain and simple.
