Okay, so today, I tried out a new recipe for some cookies. I’ve been craving something sweet and crunchy, and I thought, why not make some coconut almond chocolate chip cookies? Sounds fancy, huh? But trust me, it’s not that hard.

First, I gathered all the ingredients. Flour, sugar, butter, eggs—the usual stuff. Then, of course, the stars of the show: shredded coconut, sliced almonds, and a bunch of chocolate chips. I love chocolate, so I went a bit heavy on those.

I started by creaming the butter and sugar together. I just used a regular hand mixer. Nothing fancy. Once that was all fluffy, I cracked in the eggs one at a time. Made sure to mix them in well. Then came the dry ingredients. I dumped in the flour, a bit of baking soda, and a pinch of salt. Gave it a good mix until it looked like, well, cookie dough.

Now for the fun part. I threw in the coconut, almonds, and chocolate chips. Folded them into the dough. It looked so good at this point; I was tempted to just eat it raw. But, you know, raw eggs and all that, so I resisted.

I preheated the oven to 350 degrees, because I saw many people online did that. While that was heating up, I scooped the dough onto a baking sheet. I just used a regular spoon and made them into little mounds. Didn’t bother making them perfectly round or anything. Who has time for that?

Then, into the oven they went. I baked them for about 12-15 minutes. I just kept an eye on them until the edges were golden brown. You know they’re done when your kitchen starts smelling like a bakery.

When they were done, I took them out and let them cool on the baking sheet for a few minutes. Then I transferred them to a wire rack to cool completely. Or at least, that’s what you’re supposed to do. I couldn’t wait, so I snuck one while it was still warm. Oops.

The Result

  • They were crunchy, thanks to the almonds.
  • Sweet, but not too sweet, because of the coconut.
  • And of course, chocolatey, because…chocolate chips.
