Okay, so this morning I woke up craving something savory, you know? Something that would really stick to my ribs. I’m talking about those breakfast muffins with sausage and Bisquick. Yeah, those things. So, I decided to whip up a batch.
First things first, I grabbed my mixing bowls – a big one and a small one. In the big bowl, I dumped in some Bisquick mix. I think it was about 2 cups, give or take. Then, in the smaller bowl, I cracked a couple of eggs and whisked them up with a fork until they were all frothy and combined. I also added about a cup of milk into that same small bowl and stirred them together. After everything was all combined, I poured that wet mix into the big bowl with the Bisquick.
Now, for the good stuff – the sausage. I had some breakfast sausage links in the fridge, already cooked. So, I just chopped those up into little pieces, nice and small, like they would get all mixed in there. I tossed those into the big bowl too. Oh, and cheese! Can’t forget the cheese. I had a block of cheddar, so I grated about a cup of that and threw it into the mix.

- About 2 cups of Bisquick
- A couple of eggs
- About a cup of milk
- Cooked sausage links, chopped up
- About a cup of grated cheddar cheese
Then came the fun part – mixing it all up. I just used a big spoon and folded everything together until it was all combined. You don’t want to overmix it, just enough so there are no dry spots left. It should make the Bisquick batter look real thick. Once that was done, I grabbed my muffin tin and greased it up real good with some cooking spray. You could use those paper liners too, but I didn’t have any on hand.
Next, I scooped the batter into the muffin cups, filling them up about two-thirds full. They looked kinda messy, but that’s okay. Into the oven they went. I baked them at, I think, 375 degrees for about 20 minutes. I just kept an eye on them until they were golden brown and a toothpick stuck in the center came out clean.
When they were done, I pulled them out of the oven and let them cool for a few minutes in the tin. Then, I carefully popped them out and set them on a wire rack to cool completely. But who am I kidding? I couldn’t wait. I grabbed one while it was still warm, and man, it was good.
The Results
The muffins were all golden brown and crispy on the outside, but soft and fluffy on the inside. The sausage added that perfect savory flavor, and the cheese was all melty and gooey. They were seriously the perfect breakfast. Next time, I might add some chopped veggies or some spices to the mix to make it my own. I think some green onions or diced bell peppers could be tasty! Or maybe a dash of hot sauce for a little kick. The possibilities are endless!
