Okay, let’s talk about how I made this Crockpot Rotel Dip. It’s a classic for a reason, and pretty darn easy to whip up. I wanted something simple but tasty for a get-together I was having, and this fit the bill perfectly.
Getting Started
First things first, I gathered my ingredients. You’ll need:
- 1 pound ground beef
- 1 (16 ounce) package Velveeta cheese, cubed
- 1 (10 ounce) can Rotel diced tomatoes and green chilies, undrained
That’s it! Three simple things. I already had some beef in the freezer, so I just needed to grab the cheese and Rotel from the store. Easy peasy.

Cooking the Beef
Next up, I browned the ground beef in a skillet over medium heat. I made sure to break it up into small pieces with a spoon as it cooked. Once it was all nice and brown, I drained off any excess grease. Nobody wants a greasy dip, right?
Into the Crockpot

Once it was all melty and delicious, I turned the slow cooker to warm to keep it at the perfect temperature. I served it up with a big bowl of tortilla chips. You could also use veggies or crackers, whatever floats your boat.
