Okay, so today I tried my hand at making chicken and noodles with mashed potatoes. It’s one of those comfort food things, you know? Always heard about it, but never really got around to making it myself until now.

I started by grabbing a whole chicken from the fridge. Gave it a good rinse and patted it dry. Then, I threw it into this big pot I have, filled it up with water, and tossed in a chopped-up onion for some flavor. Brought that whole thing to a boil, then turned the heat down to let it simmer for a while.

While the chicken was doing its thing, I got to work on the noodles. I used egg noodles because, well, that’s what everyone seems to use for this. Cooked those up until they were nice and tender, just how I like ’em. Drained the noodles and set them aside.

Next up, mashed potatoes. I peeled and boiled some potatoes until they were soft enough to mash. Drained them, added in some butter, milk, and a pinch of salt and pepper. Then I mashed everything together until it was all smooth and creamy. Man, I love good mashed potatoes.

By this time, the chicken was ready. I took it out of the pot and let it cool for a bit. Once I could handle it, I shredded the meat off the bones. Easy peasy.

Now for the best part. I scooped a good helping of those mashed potatoes into a bowl, then ladled a bunch of the chicken and noodles over the top. I even poured a little bit of that chicken broth in there for extra flavor. Seasoned it with a bit more salt and pepper, because why not?

Let me tell you, it was delicious. The chicken was so tender, the noodles were perfect, and those mashed potatoes were just heavenly. A total comfort food win. And you know what, It turns out good. Might not be the prettiest dish, but it sure hit the spot. I’ll definitely be making this again. Maybe next time I’ll try adding some veggies or something, but for a first attempt, I’m pretty darn pleased with myself.
