Okay, so today I tried to make this meatloaf, but not just any meatloaf. I’m talking about the one with Campbell’s vegetable soup. Yeah, that’s right.
First off, I preheated the oven to 350 degrees Fahrenheit. That’s the magic number, apparently.
Then, I grabbed a can of Campbell’s vegetable soup. I drained the sauce from the vegetables and kept it aside. You’ll need that sauce later, trust me.

After that, I got a big bowl and cracked an egg into it.
- One pound of ground beef
- One egg, all nice and mixed up
- Half a cup of breadcrumbs
- The drained Campbell’s soup can be dumped into this bowl
- A quarter cup of chopped onion
- A dash of salt and pepper, just a little bit
I mixed everything together, and then added the drained soup that I had kept. I shaped the mix into a loaf and put it in a baking pan.
Then, I mixed some of the reserved sauce from the soup with a bit of ketchup and mustard and spread it over the meatloaf.
I popped the whole thing in the oven and baked it for about an hour. You’ll know it’s done when it’s all nicely browned and cooked through.
When it was done, I took it out and let it cool for a bit before slicing. The first slice was perfect, juicy and full of flavor. And the sauce I made? It added this nice tanginess. The soup really made a difference.
Anyway, that’s how I ended up making Campbell’s vegetable soup meatloaf. It turned out pretty good, if I do say so myself. Give it a try sometime, you might like it!
So, this meatloaf turned out great. It’s a simple recipe, really. Nothing too fancy, but sometimes, those are the best kind. I’m no chef, but I like to think I can whip up a decent meal every now and then.
I remember someone said that you can roll up the vegetable course in the loaf. Well, I didn’t do that, but it got me thinking. Maybe next time, I’ll try something different. It’s all about experimenting, right?
